Ireland

Everyone thinks of something different when they think of Ireland, but for me it is castles, cheese, cliffs, and the Wild Atlantic Way.

I have been to Ireland several times over the years.  Each of my trips has been different and I always leave wanting more.  There is so much to do there and with so many gorgeous places to stay and fun activities, it is an island that will please everyone. 

I spent a week in County Clare with my teens over this last summer.  We hiked the Cliffs of Moher, visited Galway, listened to live music, went to the Aran Islands, spent time on several farms and made our own perfume in the Burren.  We then headed to Dublin to see the Book of Kell’s and the Old Library, tour Trinity, see friends and do a little shopping.

The time before that, I was lucky enough to see a rugby match at Aviva Stadium, take a food tour of the picture-perfect town of Kinsale and sleep in an actual castle, which was enchanting.

The food in Ireland is incredible which totally took me by surprise.  There is so much fresh cheese, meat and vegetables produced on the island with such love and care.  And the hotels, restaurants and chefs all go to great lengths to showcase it.  Farm to table is so good and so present there.  And let’s not forget the beer and whiskey. 

The next time I go, I will head to Belfast and County Kerry and explore them both.  I also think it is about time I tried golf—there is no prettier place for it.
